Right, this is going to be a really simple healthy recipe that you can have for lunch or dinner, on this occasion I had it for lunch as a pre-gym meal.
For this recipe I will be using Organic Dried Daikon from Clearspring, Clearpring are a vegan, organic and premium quality Japanese and European food seller.
Now I know you're probably wondering what a daikon is, it's basically a huge white radish... In this meal it fills the part of noodles.
Ingrediants:
Stir-fry
Clearspring's Organic Dried Daikon 40g
4 Sliced Mushrooms
4 Chopped Mini Sweetcorn
4 Thinly Sliced Broccoli Florets
Sesame Oil
Sesame Seeds
2 Minced Garlic Cloves
Sauce
3tbs soy sauce
2tsp cider vinegar
1tsp brown sugar
1/2 cup of water from soaking the daikon
1tsp black pepper
1tbs corn flour
Instructions:
Firstly mix all the ingredients for the sauce together and put to the side.
Heat a large frying pan or wok on a medium heat, drizzle about a tbs of sesame oil into the pan.
When the pan is hot add the garlic, when it starts to brown and you can smell it add all the veg (corn, daikon, broccoli and mushrooms).
Cook for about 10 mins mixing frequently, if it gets too dry and looks like it could burn add a little more oil.
Make a gap in the middle of the pan, re-stir the sauce quickly and pour it into the gap, when it starts to bubble and darken mix everything together.
When everything is coated in the sauce you're ready to serve, turn off the heat, sprinkle some sesame seeds over it all and enjoy!
Organic Dried Daikon is great as a noodle substituent and far more nutritious, it has health benefits such as boosts immune system, aids weight loss and respiratory issues, helps prevent cancers such as stomach cancer and is also very healthy for the kidneys.
